Optimisation of the maturation process is an essential component in achieving our industry’s sustainability targets. We look at how to minimise losses during maturation to reduce the resources required to produce a fixed volume of spirit, addressing factors such as energy, water and raw material use. Lower losses have the added benefit of reducing the volatile organic carbon (VOC) emissions associated with maturation. We examine both cask and warehouse-based strategies for minimising losses. We also explore methods for enhancing the maturation process with the aim of producing the desired quality in a shorter time, which will reduce the amount of spirit lost during the full term of maturation.
